How To Make Strawberry Boba Pearls (1)

This recipe is a refreshing twist on the traditional royal milk tea you usually get at your local boba store. Sukoshi Mart’s Strawberry Milk Tea consists of fresh strawberry tapioca pearls andNitto Strawberry Royal Milk Tea– which is the perfect combination of sweet strawberry milk and black tea. When combined it is a delicious drink perfect for the upcoming summer months.

StrawberryTapioca Pearls

Ingredients:

  • Tapioca Starch⟶This is the main ingredient for the pearls. It is common for tapioca starch to also be sold as tapioca flour.
  • Strawberries⟶Frozen or fresh strawberries can be used for this recipe. However, fresh strawberries are often sweeter and are easier to work if. If you are using frozen strawberries, allow them to thaw first.
  • Water
  • Sugar⟶We used white granulated sugar for this recipe, but any type of sugar can be used.
  • Nitto Strawberry Royal Milk Tea⟶You can purchase this in-store or online at SukoshiMart.com

RoyalStrawberry Milk Tea

Nitto Strawberry Milk Tea is a royal milk tea that consists of powdered strawberry juice from Japan’s Fukuoka prefecture, domestic black tea leaves, and whole milk powder from Hokkaido. These teas come as instant powders in convenient, individual packets.

Instructions (How to Brew):

  1. In a cup, combine 1 packet of Nitto Strawberry Milk Tea and hot water.
  2. Stir well to combine powder.
  3. Enjoy hot or cold!

Tools You Will Need:

  • 3 mixing bowls
  • 1 pot
  • Sieve

Optional:

  • Rolling pin⟶To knead and strawberry tapioca dough
  • Blender⟶To speed up the process, you can blend the strawberries to a pulp

Recipe: Strawberry Royal Milk Tea Boba with Strawberry Pearls

Ingredients:

  • 1 cup tapioca starch
  • 3-4 strawberries
  • 1 tablespoon of water (15g)
  • 1 tablespoon + 1 teaspoon sugar (20g)
  • 1 packet of Nitto Strawberry Royal Milk Tea

Instructions:

  1. In a bowl, mash 3-4 strawberries to a pulp and add 1 tablespoon of water. Mix and strain with a sieve to make it smooth.
  2. In a pot over medium heat, combine strawberry mixture and 1 tablespoon + 1 teaspoon of sugar. Mix until it starts to boil and then let simmer on the lowest heat setting for2 minutes.
  3. In the pot over low heat, add 1/2 cup of tapioca starch to the strawberry and mix. Do this for6-7 secondsand remove from heat immediately.
  4. Flour a clean surface with tapioca starch. Start kneading mixture. If the dough is too dry, add a few drops of water. If the dough is too wet, add more tapioca starch. Knead until it is smooth and resembles dough-like consistency.
  5. Roll out the dough to form tiny tapioca pearls. Powder pearls with tapioca starch to prevent sticking during Step 6.
  6. Cook tapioca pearls in a pot of boiling water. Boil for10-15 minutesdepending on the size of pearls. Remove and transfer pearls to iced water to prevent further cooking. Set aside.
  7. Prepare Nitto Strawberry Royal Milk Tea packet as per package instructions.
  8. In a glass, combine strawberry tapioca pearls and strawberry milk tea. Serve and enjoy!

Helpful Tips:

  • Sifting the tapioca starch before adding them to the strawberry mixture will prevent any clumps. This makes the dough smoother and easier to work with.
  • When combining the tapioca starch and strawberry mixture, it’s important to remove from heat as soon as possible. This prevents the mixture from becoming too sticky.
  • The tapioca pearls will slightly expand during the boiling process. It’s best to form your tapioca pearls slightly smaller than your preferred size.
  • When boiling the tapioca pearls, gently stir the water every so often to prevent them from sticking to one another.
  • For a creamier strawberry milk tea, substitute the hot water for warmed milk when preparing the drink.

Recipe: Homemade Strawberry Boba

Reminder, I made two different boba recipes in ONE day because I am crazy. If you missed it,here is the brown sugar boba recipe. This time, I made strawberry boba from scratch and yes, it is made from fresh strawberries. Inspiration from TikTok (duh). How was it? Well, even though I had to make fresh strawberry puree for this, you can’t really taste any strawberry in the boba…it’s mainly for the color. I made fresh strawberry milk to accompany the boba. I’m not doing this again. But here goes:

Strawberry Boba

Strawberry Boba Ingredients:
½ Cup Fresh Strawberries, diced
2 T Sugar
2 T Water
1-2 T Honey

Strawberry Boba Instructions:

  1. Add strawberries, sugar and water to a microwave safe bowl/cup. Microwave for 1 minute (I microwaved about 1.5 minutes).
  2. Strain strawberry mixture through a sieve to get rid of the pulp. Cool for 3 minutes.
  3. Add in 3T of tapioca starch into the mixture and mix through.
  4. Continue to microwave mixture for 1 minute (in 15 second intervals), it took me 1 min 15 sec. You are looking for a thickened and very sticky mixture. Cool for 3 minutes.
  5. Add 1 C of Tapioca Starch and knead through.
  6. Roll into little balls, add additional tapioca starch for dusting if needed.
  7. Heat water in a pot and add the tapioca balls into the pot. Immediately stir the balls in the pot to prevent them from sticking to each other and to the bottom of the pan. It will take about 30 seconds for the balls to free float to the top of the surface on its own.
  8. Boil on medium-high for 20 minutes. Turn off heat, keep lid on pot and let the tapioca balls sit for an additional 20 minutes.
  9. Drain tapioca and place in a bowl, add 1-2 T of honey to sweeten balls and keep sitting in a syrup.

Strawberry Milk Ingredients:
16 strawberries
60g sugar
500ml milk

Strawberry Milk Instructions:

  1. Wash strawberries, cut 8 strawberries in half and crush them in the pot (I used a potato masher), add sugar and heat on medium heat for 2-3 minutes
  2. Remove from heat and let mixture cool down.
  3. Dice remaining 8 strawberries.
  4. Place the strawberry syrup, diced strawberries and milk in a bottle and mix/shake. Ready to go!

Since the process of making a regular brown sugar boba pearls is simply using brown sugar as the liquid to activate the tapioca starch. So from there, we know that theformulation to boba pearlsis simply

By having that in mind, I begin working on how should I create the flavored liquid? And to raise the benchmark to another level, I thought let’s make chewy boba pearls with fruit bits in them!

Hence I come to think that I will need to make a fruit puree, also I will need to play around a little bit with the colors, so the drinks would look vibrant while refreshing! So I went on to around local traders market hunting for fruits that are suitable for its purpose.

Some of the fruits are delicious, but would not be able to make the boba pearls look vibrant. From my fruits shopping, I had come to pickred dragon fruits,orange flesh taro roots,green kiwi,andyellow kiwi.

p/s : I think we can even use vegetables, think cucumber!

Currently, around the globe is crazed with boba pearls drinks and it has become a global trend. People getting addicted to it, well in a happy way. The popularity of boba pearls has spread across Europe, Germany in particular and are now converting the young people across North America as well.

Manufacturing Colorful Fruity Boba Pearls?

Currently, I do not think there is any manufacturer that is willing to produce them with real fresh fruits as it will be;

  1. Not cost-effective – Using fresh fruits is going to be expensive.
  2. Labor intensive – the process of extracting the flesh of the fruits.

If it is going to happen, I believe plenty of coloring and addictive will be added.

Boba Pearls

INSTRUCTIONS

Making Raw Boba Pearls Dough

  • Remove the skin of the fruit if any.
  • Chop fruits into tiny pieces or blend them into puree.
  • Into a pot, add chopped fruits, 1 cup of tapioca flour, sugar and hot water.
  • Cook them over lowest heat. As you cook them, stir consistently to mix and prevent bottom from burning.
  • Cook until it comes together and form a stick dough.
  • Turn off the heat.
  • Add another 1/2 cup of tapioca flour and fold the flour into the dough.
  • Once the flour are folded in, generously flour a clean working surface as well as your hands.
  • Transfer the dough onto the floured surface.
  • Roll the dough into an elongated shape and cut them into several smaller pieces.
  • Then roll the smaller dough into a smaller roll about the diameter of a chopstick.
  • Then cut the at about 1 cm in length and roll them into round shape.
  • Transfer the round uncooked boba pearls into a container and flour them again to prevent them from sticking to one another.

Cooking Boba Pearls

  • With a pot, add enough of water to boil the uncooked boba pearls.
  • Only add the uncooked boba pearls when the water are at boiling point.
  • Simmer for10 minutes.
  • After that, transfer the cooked boba pearls into ice water to stop the cooking and set aside.

Braising Boba Pearls

  • Into a pot, add chopped fresh fruits, sugar and hot water.
  • Bring it to a boil, add boba pearls in.
  • Simmer for15 minutes.
  • You should achieve a thick gooey jam like consistency.
